  I have a user requesting copy of sent items be forwarded to a gmail address like with regular forwarding any ideas how this could be accomplished?

  This is typically handled by the email client.  What client are they using?

  In Webmail you can configure addresses that should be automatically CC'd or BCC'd by going to Options / Compose.
